Tasting Notes

               Amarone is a famous wine style, produced in the flourishing agricultural region of Verona, east of Italy. It is part of the appassimento wine-making method where harvested grapes are air-dried, traditionally on straw mats and placed in a special drying chamber, for around 120 days. This allow the grapes to shrivel or rasinate, concentrating the flavours and natural sugar before fermentation, hence giving the wine rich, dense flavours with very full-bodied mouth-feel.

               This Viviani Amarone has a very deep nose, full of dried plums, prunes and dark fruits with significant rasiny notes, and hints of tobacco, vanilla and toast. A powerful, full-bodied wine on the palate with fleshy texture, high alcohol yet well-balanced with freshness of the fruit acid and surprisingly soft silky tannins, resulting in a pleasantly well balanced wine that provides a deliciously lengthy finishing.


For international food - recommended pairing with a big juicy steak or roast lamb filled with herbs.

For local delights - recommended pairing with deep braised pig trotters or hot plate venison.
