The Barbera collection normally takes place in the second half of September. The grapes, harvested by hand in small airy boxes, are crushed and de-stemmed and fermented in tanks at a controlled temperature (30-32 ° C). After a maceration of about 4/5 days, it is kept in stainless steel tanks where alcoholic and malolactic fermentation ends. At the beginning of the year a decanting is carried out in barrique and after an aging of about 6 months it is bottled in the summer months without clarification or filtration.
Deep ruby red with violet reflections, with aging it tends to garnet. Vinous, with hints of black currant, blackberry and sweet spices. Warm, full-bodied, with the right acidity and long finish of red fruits.
Goes well appetizers, first courses, cheeses and cured meats.
