The Barbera collection normally takes place in the second half of September. The grapes, harvested by hand in small airy boxes, are crushed and de-stemmed and fermented in tanks at a controlled temperature (30-32 ° C). After a maceration of about 4/5 days, it is kept in stainless steel tanks where alcoholic and malolactic fermentation ends. At the beginning of the year a decanting is carried out in barrique and after an aging of about 6 months it is bottled in the summer months without clarification or filtration.

Tasting Notes

Deep ruby ​​red with violet reflections, with aging it tends to garnet. Vinous, with hints of black currant, blackberry and sweet spices. Warm, full-bodied, with the right acidity and long finish of red fruits.

Goes well appetizers, first courses, cheeses and cured meats.
