Nebbiolo is a late grape, harvesting is normally done in October. The grapes, harvested by hand in small airy boxes, are crushed and de-stemmed and fermented in tanks at a controlled temperature (30-32 ° C). After a maceration of about 10/15 days, it is decanted into stainless steel tanks where alcoholic and malolactic fermentation ends. After an aging of 4 years, 2 of which in oak barrels, the Barolo is bottled in the summer months without clarification or filtration.
Intense, ethereal, spicy with hints of rosehip petals, licorice, truffle. Warm, austere, full, robust and at the same time velvety and elegant. When young it is appreciated for its freshness even if with some angularity, with the refinement the wine softens and develops the warmer and spicy tertiary sensations.
Goes well with appetizers, first courses, cheeses and cured meats.
