Vinification and Aging: The grapes are harvested in the second decade of September and subjected to soft pressing. After fermentation, the wine remains on its lees, "sur-lie" aging, until January-February.

Tasting Notes

Catarratto vinified in purity with a lively color with straw-like notes and greenish reflections. Intensely fruity, delicately floral, it contains jasmine, apricot, white peach and yellow plums. Balanced in the mouth with a right fullness, freshness and acidity giving it drinkability, flavor and a good longevity.

Food Pairing:

Goes well with shellfish, appetizers and snacks.
